The blue coins are fun to collect in themselves. It's just that, if you're trying to collect all of them, they're tracked very poorly--after Bianco Hills, a good number of the coins are exclusive to certain episodes.
Should probably let you know that Super Kirby Clash currently has a password "FIRSTANNIVERSARY" that gives you a boatload of Gem Apples and other goodies. Just got around to entering it and was surprised by how much I got from it.
