I don't know. Item minigames slowed down the process of the game quite a bit, and most of the time they were random, or it was very difficult to get the item you wanted. I'd rather there be a quick way to decide what item you get.

Yeah, they mess with the stages, and it makes it weird. I used to play Mario Kart 64 all the time with my family, so it's pretty important to my childhood. But for some reason the retro tracks just seem wrong.
Not character slots, but other small features like Yoshi's color change. Maybe the ability to play as Boo with a crown, or some way to play as a Spear Guy all the time.

The thing I don't like about the retro tracks is that they don't feel very nostalgic, and they seem lazy to me. I used to play Skyscraper all the time in Mario Kart 64, but it didn't feel right in Mario Kart Wii.

Okay, but my point was that they really aren't old enough to be put in the next game. I'm pretty sure most of the people who bought Mario Kart DS also bought Mario Kart Wii, and the same thing will probably happen in this game.
But what about RPGs like The Thousand Year Door? That sold well, and it didn't have Bowser as the main villain. Recently, Bowser Jr. has been the main villain in some games too, like New Super Mario Bros.

I wouldn't mind more personalized generic enemies in some of the games, either (that's what most of the partners are). It could make the story parts of the mainstream games more unique.
They were pretty creative with the Defensive Power Shots already. Also, no other Mario game has color swaps for characters like Mario and Luigi (unless you count Super Smash Bros., and that's for a reason). It wouldn't look right.

That's my point. They are the only characters that could have color swaps, so that's why they didn't put it in. Technically, Koopas and Shy Guys only have one or two different colors anyway. Yoshis have many different colors to choose from, and it makes (slightly) more sense to have them...
If you mean the original arcade version, like what you'd find in an actual arcade, then no. I played it in Donkey Kong 64. I think most of the other re-released versions are syndicated versions of the game.

Mario Kart doesn't really have any unique names other than Super Circuit and Double Dash. Every other one is based on its console (I just realized this).
