It's less the model itself and more the artstyle. 2D art for that series looks very similar, if not exactly like that model.

For Yoshi I guess it's because he doesn't really act like a dinosaur at all whereas Diddy has some chimp moves and DK and Bowser are monstrous powerhouses.

Crossover fighting games kinda vary. You don't get rosters as out-there as Smash, but you do get the occasional stuff like Roll from Mega Man (specifically the chibified Powered Up version) fighting Yami from Okami. I guess Marvel crossovers in general qualify, but the character choices there...
