Some of my ideas.
Moon Fortress Galaxy. A large moon with a runway and a rocket ready to launch, and a large complex to explore. (Similar to X-Naut Fortress.)
Galactic Cruiser Galaxy. A large cruise liner level inspired by Daisy Cruiser from Mario Kart Double Dash.

The opening of Super Mario Galaxy. When Bowser's airships were coming in with the SMB3 airship theme orchestrated to perfect was just so mind blowing to me.
I'd say it's more of an Enhanced Port with extras for me anyway. For me to make it a remake would be to really update everything graphically. Say remaking it on 3D World's graphic engine with smoothed out level designs.
I like the more urban levels as seen Super Mario Sunshine. Ricco Harbor is my favorite level in that game. It was nice seeing Mario somewhere somewhat realistic. I'd love to see more levels like that in future Mario games.

I really loved Dark Moon. It's one of the best games I've played this year. It was a well thought out game with a wonderful sense of humor. It had charm. I really wish Nintendo would make an HD port for the Wii U.

And you're right. Not even Galaxy 1/2 had all Orchestral tracks. It's jingles were synth and The mission select screen music was also midi synths.
