Koopa Kids have seemingly been erased from Mario history altogether. Bowser Jr. certainly made them quite redundant. Also shoutout to the Kleptoad, appearing on a single planet in Super Mario Galaxy 2.
I always understood Mario Sunshine's King Boo as not the real thing, but rather a 'fake' King Boo made out goop - which goes to explain his unusual appearance, and why this design was so unique. Sunshine design could be used as an alt for Mario Kart Tour though.

If you're looking for a, well, scientific motivation, it looks like the Bowser species is somewhat resistant to all kinds of major injuries - Koopalings did survive lava and collapsing castle, and Bowser Jr. was scared not by being thrown in the outer space. But again, it's Super Mario.
I believe Snailicorn from New Soup DS makes a good fit. It has literally no business existing but to be an unexplained replacement for Bully. Talking about anti hero.

Corona Mountain from Sunshine. God, I hate that level, it's just unfunny. On a side note, I think battling Bowser's in a giant green slime bath tub was pretty funny.
