Why do the yoshi's on isle Delfino die the instant they touch water?

Technically, they have to be submerged in water for them to drown.

They dissolve because Yoshis there are made of salt.

I read an interesting theory earlier today stating that they're more paint creations of Shadow Mario/Bowser Junior. The fact that Yoshi Eggs are unlocked after chasing and stopping Shadow Mario with a Yoshi Egg in Delfino Plaza makes this theory a bit plausible.

Still doesn't explain how Yoshis can actually walk over water, just not swim/submerge in it
