It depends on what gaming device you want to record.
PC's are the easiest, just search for screen capture on Google and select something that doesn't look like a virus.
Consoles on the other hand are somewhat harder. There are capture devices for HDMI and other connectors available for purchase, but those can be pretty costly depending on the connection. HDMI devices can easily go in the hundreds, though AV (often red, white and yellow colored connectors) can go under 20 bucks.
I believe consoles like Xbone and PS4 have some build-in recording features, but I'm not very familiar with those (when my brother tried to use it on PS4 is didn't work last time I checked).
Handheld devices are an entirely other story. For 3DS you need a 3DS Capture Device, which needs to be soldered to the 3DS. For other handhelds I don't know, but similar devices exists for the PSP and PSV to my knowledge. Wii U GamePad also has devices for this purpose, but ka-ching.
