I managed to fix my late father's PC. Is it possible to transfer the screenshots and videos taken on a Switch to a PC? If so, how do I do it?

Yes, assuming you have an SD card inserted into your Switch.
If you have, there will be a folder on it named Album (in the Nintendo folder if I recall correctly), where your screenshots and video's are sorted by year, month and day. You can put that card into your pc and browse it with the file explorer.
If you don't have an SD card inserted, you need to put one in and manually copy existing items over using the functions the Album has for that (view an item and there should be a button in the bottom bar). After that, it works the same.
