Use 2GB at most. I don't know what will happen to SDHC cards but you don't need that much space in your SD card. All of our data is only about 700 MB
I don't know if hacking works with Mac, since I don't have one, but it's a matter of fact if the programs work on it or not, not the hacking itself actually.
