MKDD: Wario Colosseum looks pretty good.
 
Ive played every mario kart game so here they are.
smk: Choco road
mk64:sherbert land
mksc: Neutral, all of them are pretty much the same to me.
mkds: Yoshi falls
mkdd: Wario colluisem (pardon my spelling)
mkw: Rainbow road.

Shockingly enough, Peach beach just didn't work for me.
 
I don't think there's a Bowser's castle in MKDD. (it's the only one I have.)
