So many tracks I like in this game but at the top of my head are (in order):

Bowser Castle
N64 Rainbow Road
Bone Dry Dunes
3DS Piranha Plant Slide

I haven't played MK8 yet, but Mount Wario looks like a real interesting track.

For new tracks I'd say Toad Harbour, and for retro Yoshi Valley.

Dolphin Shoals, Sherbet Land and Ice Ice Outpost are runner ups.

I only played the original 32, so I can only mention my favourites from those. Of these 32, I like...
- Bone Dry Dunes (I played it a lot out of necessity since it's the only I messed up most in both 150CC, Mirror and Time Trial, but it kind of grew on me as a course I don't mind playing)
- Mario Kart Stadium (I like the grand scale it has as the first course. Plus, the theme is really good)
- Wii U Mario Circuit (Really love the music on this one. It's one theme I don't mind hearing all day. It's also bright and colourful)
- Mount Wario (Also love the music on this one. The course is also unique in its point A to point B approach)
