I've seen people say beer tastes like pee or something, but having eaten a food item that's literally soaked and fermented in skate pee, I beg to disagree.
In the U.S., I don't like the term "authentic" to describe ethnic food that better matches country of origin. It implies the food here is "faked", "bastardized" or "tastes worse/cheaper" by default, like people aren't allowed to experiment cuisine with different ingredients. Moreso, a lot of the "inauthentic" "Americanized" food were developed by immigrants from their food's country of origin. I prefer distinguishing cuisine as "traditional" and "Americanized".
I'm not the biggest fan of Panda Express, but I like their food all the same, and I've heard anecdotes of middle-aged Chinese immigrants who people think would balk at the food loving the food all the same.
